If your garden has a membrillo tree, lucky you. You get the blossom's sweet fragrance and delicate beauty then wonderful fruit like these from two years ago.

My family's tree didn't produce this year so I found Quince at the market.

Select large, unbruised fruit. My market had them well washed. If using fresh, or the greengrocer hasn't done so, wash the fuzz off the fruit. Put the membrillo in a large pot, add water to nearly cover, and bring to a boil for a few minutes. Don't over boil so once the water boils, turn off the burner and let the fruit cool. Place them in a plastic bag and refrigerate overnight or a couple of days.
Reserve some or all of the cooking water; all to make a delicious drink, some to start the cooking process.
