When we put our chiles we peel them and leave the seeds inside. It's purely a matter of choice. Some years I bag the chiles unprocessed and peel and see upon defrosting. Some years I go the full route of peeling and seeding. If I buy two bags of chiles, I'll take a shortcut and prepare one bag and freeze the other the "no love" manner.
