Use rice flour. If using a GF baking mix, omit the salt, baking powder and soda. Here I'm using frozen chiles. Fresh chiles require additional preparation steps. Canned chiles work well, and are probably already de-seeded. I remove only the majority of seeds from my fresh or frozen chiles. I used two large eggs for six chiles. You can use more eggs for a richer batter.
